  • 1 teaspoon garlic powder warm background flavor.

Preparation

  • In a large bowl, beat the softened cream cheese until smooth and creamy. Add the shredded cheddar and Monterey Jack and fold until evenly combined.
  • Stir in the diced jalapenos, chopped bacon, green onions, garlic powder, smoked paprika, salt, and pepper. Taste and adjust heat — add a few jalapeno seeds if you want a bolder kick.
  • Scoop the mixture onto a sheet of plastic wrap and use the wrap to shape it into an oblong football shape, pressing firmly so there are no air pockets.
  • Chill in the refrigerator for at least an hour to firm up.

Coating and Serving

  • Optional: Roll the chilled ball in crushed tortilla chips or panko for extra texture.
  • Pipe thin white lines of sour cream or cream cheese down the center to mimic football laces, and garnish with chopped chives.
