  • 2 pieces boneless, skinless chicken breasts You could use thighs for added flavors.
  • 1 cup uncooked orzo pasta Cooks quickly and soaks up flavors.
  • 1 cup sun-dried tomatoes (packed in oil) Adds a rich, tangy kick.
  • 2 cups fresh spinach Kale can be a robust alternative.
  • 1 small onion, diced Shallots could work in a pinch.
  • 3 cloves garlic, minced Essential for Italian flavor.
  • 2 teaspoons Italian herbs (thyme, oregano, basil) For an authentic Italian flair.
  • to taste Salt and pepper
  • 2 tablespoons olive oil Use avocado oil for a lighter option.
  • to taste Parmesan cheese, grated (optional) For a final cheesy touch.

Instructions
 

Preparation

  • Season both sides of the chicken breasts with salt, pepper, and Italian herbs. Let marinate for a few minutes while heating the oil.
  • In a large skillet over medium heat, add olive oil. Wait until the oil shimmers.

Cooking

  • Place the chicken in the skillet and cook for 6-7 minutes on each side, until golden brown and cooked through.
  • Once cooked, remove the chicken and let it rest on a cutting board for about 5 minutes.
  • In the same skillet, add more oil if needed and sauté the diced onion for 2-3 minutes until translucent, then add minced garlic.
  • Add the orzo and sun-dried tomatoes, stirring well. Pour in 2 cups of water or chicken broth and bring to a gentle simmer. Cook for about 10 minutes until the orzo is al dente.
  • Stir in fresh spinach and continue cooking until wilted, about 2-3 minutes.
  • Slice the rested chicken into bite-sized pieces.
  • Gently fold the sliced chicken back into the skillet with the orzo and veggies. Stir, adjust seasoning, and garnish with grated Parmesan if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For freezing, portion out and store in freezer bags. Reheat in a skillet with a splash of water or broth.
