Instructions
 

Preparation

  • If not using rotisserie, poach chicken breasts in gently simmering water with a bay leaf and peppercorns for 12 to 15 minutes until cooked through.
  • Let the chicken rest for 5 minutes, then shred with two forks.

Make the Dressing

  • In a large bowl, whisk together mayonnaise, plain yogurt (if using), Dijon mustard, lemon juice, and a pinch of salt and pepper until glossy and smooth.

Build the Salad

  • Add shredded chicken, diced celery, minced red onion, and sweet pickle relish to the dressing.
  • Toss until every piece is coated and inviting.

Add Texture and Herbs

  • Fold in toasted nuts (if using) and fresh herbs.
  • Taste and adjust seasoning with more lemon or paprika as needed.

Chill or Serve

  • For best flavor meld, chill for at least 30 minutes.
