  • 2 tbsp Honey Choose quality, raw honey or substitute with maple syrup for a vegan option.
  • 2 tbsp Butter For a dairy-free version, substitute with coconut oil.
  • 1 tbsp Fresh Thyme or Parsley Can also use rosemary or dill for variation.

Preparation

  • Wash and peel the carrots. Cut them into uniform pieces, about 1 inch long, to ensure even cooking.

Cooking

  • In a large skillet over medium heat, add the butter and let it melt.
  • Once melted, toss the carrot pieces into the skillet, stirring to coat them in the butter. Sauté for about 5 minutes until they start to soften and glisten.
  • Drizzle in the honey, stirring to evenly coat each carrot. Allow the honey to caramelize as they cook.
  • Sprinkle with salt, pepper, and your chosen herbs. Cook for another 10-15 minutes, stirring occasionally, until the carrots are fork-tender and coated in a glossy glaze.
  • Remove from heat, and let it sit for a couple of minutes before serving.

Notes

For an even richer flavor, roast the carrots in the oven at 400°F (200°C) drizzled with honey and olive oil for about 25-30 minutes. Add a pinch of cayenne pepper for a spicy twist or top with toasted pecans or walnuts for added texture.
