Ingredients

Main Ingredients

  • 1 pound Shrimp Fresh or frozen shrimp work well. If using frozen, make sure to thaw them beforehand.
  • ¼ cup Honey Feel free to use raw honey for a deeper flavor.
  • 4 cloves Garlic Minced.
  • ¼ cup Soy Sauce Choose low sodium if you prefer less salt.
  • 2 cups Rice White or brown rice; quinoa or cauliflower rice could be alternatives.
  • 1 cup Bell Peppers Chopped; use any color for a splash of color and crunch.
  • ¼ cup Green Onions Chopped; they add freshness.
  • Vegetable Oil For cooking—can substitute with olive oil.

Instructions

Cooking

  • Begin by cooking the rice according to package instructions.
  • In a small bowl, combine honey, soy sauce, and minced garlic. Stir until mixed well.
  • In a large pan over medium heat, add a drizzle of oil. Once hot, add the shrimp. Sauté until they turn pink, about 3–4 minutes.
  • Pour your honey-garlic mixture over the shrimp and let it sizzle.
  • Incorporate the chopped bell peppers and stir for another 2–3 minutes until they soften slightly.
  • Serve the shrimp and vegetable mixture over the cooked rice and garnish with green onions.
  • Enjoy the dish with your loved ones!

Notes

Feel free to add any veggies you love like broccoli or snap peas. For a gluten-free option, use tamari or coconut aminos in place of soy sauce. This recipe also works wonderfully with chicken or tofu.
