  • 2 large sweet potatoes Yams work beautifully too.
  • 2 tablespoons olive oil Coconut oil works if you’re feeling adventurous.
  • 1 teaspoon garlic powder Fresh minced garlic can also be used.
  • Salt and pepper To taste

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and dice the sweet potatoes into bite-sized pieces.
  • In a large bowl, toss the sweet potatoes with olive oil, garlic powder, salt, and pepper.
  • Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  • Slice the honey garlic sausages into chunks and distribute them among the sweet potatoes.

Cooking

  • Place the baking sheet in the oven and roast for about 25–30 minutes until the sweet potatoes are tender and the sausages are browned, flipping everything halfway through.
  • Once cooked, remove from the oven and sprinkle with fresh parsley or chives, then serve.

Notes

Feel free to adapt the recipe with turkey or vegetarian sausages, add herbs like rosemary or thyme, or include cranberries or pecans for a festive twist. Serve with a simple side salad or roasted greens for a balanced meal.
