  • 4 medium Sweet Potatoes Look for firm, vibrant sweet potatoes with smooth skin.
  • 4 slices Bacon Choose your favorite kind – thick or regular.
  • 2 cups Heavy Cream Substitute with half-and-half or coconut milk for a dairy-free version.
  • 1.5 cups Shredded Cheese A mix of sharp cheddar and Gruyère is recommended.
  • 1 tablespoon Fresh Herbs (Thyme and Rosemary) Feel free to experiment with your favorites!
  • 2 cloves Garlic, minced For an aromatic punch.
  • Salt and Pepper To taste.
  • 2 tablespoons Butter For greasing the baking dish.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cook the bacon in a skillet over medium heat until crispy. Set aside and reserve drippings.
  • Wash, peel, and thinly slice the sweet potatoes into rounds about 1/8 inch thick.
  • In a mixing bowl, whisk together the heavy cream, minced garlic, salt, pepper, and half of the fresh herbs.

Layering and Baking

  • In a greased baking dish, layer a third of the sweet potatoes, followed by half of the cooked bacon, half the shredded cheese, and a third of the cream mixture.
  • Repeat the layering process until all ingredients are used, finishing with cheese and herbs on top.
  • Cover the dish with aluminum foil and bake for 30 minutes.
  • Remove foil and bake for an additional 15 minutes until the top is bubbling and golden brown.
  • Let cool slightly before serving.

Notes

For added crunch, sprinkle buttered breadcrumbs on top before final bake. Consider adding cooked shredded chicken or sautéed greens for a more filling meal.
