For the Creamy Layers

  • 1 box Instant Vanilla Pudding Mix Adds creaminess and helps keep the cake moist.
  • 1 cup Milk For the pudding mixture.
  • 1 cup Cool Whip For the airy, creamy topping, or use homemade whipped cream.

For the Topping

  • 1 can Crushed Pineapple Adds a delightful tropical flair; drain well.
  • 1/2 cup Chopped Nuts Optional; pecans or walnuts work beautifully.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the yellow cake mix, eggs, and milk until just combined.
  • Pour the batter into a greased 9×13-inch baking dish.
  • Bake for 30 minutes or until a toothpick inserted in the center comes out clean.

Layering

  • While the cake cools, whisk together the instant vanilla pudding mix and milk in a separate bowl until smooth.
  • Once the cake is cool, poke holes all over the surface with a fork.
  • Pour the pudding mixture over the cake, allowing it to seep into the holes.
  • Spread the crushed pineapple evenly over the pudding layer.
  • Spread the Cool Whip over the pineapple.

Chilling

  • Refrigerate for at least 2 hours before serving.

Notes

Leftovers can be stored in the refrigerator for up to three days. You can prepare the cake, pudding, and pineapple layers a day in advance—just assemble with the Cool Whip layer before serving. Level the cake top for a professional look if desired.
