  • 1 cup Rice Long-grain white rice works best, or use brown rice for added nutrition.
  • 2 Carrots, diced These add sweetness and color. Use parsnips if you prefer.
  • 2 stalks Celery, diced For flavor and crunch.
  • 1 Onion, diced A flavor base that brings the dish to life.
  • 3 cloves Garlic, minced Essential for an aromatic flavor.
  • 4 cups Chicken Broth Can substitute with vegetable broth for a lighter version.
  • 2 Bay Leaves Infuses the soup with subtle aroma.
  • 1 tsp Thyme, dried Use fresh if available for better flavor.
  • to taste Salt and Pepper Season to personal preference.
  • 2 tbsp Olive Oil For sautéing the vegetables.

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the diced onions, carrots, and celery. Sauté for about 5 minutes until the vegetables soften.
  • Add the minced garlic and cook until fragrant.
  • Toss in the chicken breast or thighs and sear for 2-3 minutes until browned on the outside.
  • Add the rinsed rice, stirring gently to combine.
  • Pour in the chicken broth and add the bay leaves, thyme, salt, and pepper. Bring to a gentle boil.
  • Reduce heat to low, cover, and let it simmer for about 20 minutes.
  • Remove the bay leaves, shred the chicken if using breasts, and stir everything together. Adjust seasoning as needed.

Notes

For a creamier soup, stir in a splash of heavy cream or a dollop of Greek yogurt. Can add fresh spinach or kale for nutrients. For a spicier version, consider adding cayenne pepper.
