Preparation

  • Peel and grate the sweet potatoes using a box grater or food processor.
  • Place the grated sweet potatoes in a clean dish towel or paper towel and wring out as much moisture as you can. This step is crucial for achieving a crispy texture!
  • In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 2–3 minutes.

Cooking

  • In a mixing bowl, combine the grated sweet potatoes, sautéed onion, salt, pepper, paprika, and garlic powder. Mix well.
  • Form the sweet potato mixture into patties and place them in the heated skillet. Cook for 4–5 minutes on each side until golden brown and crispy.
  • Once cooked, remove the hash browns from the skillet. Garnish with chopped green onions if desired.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to three days. To reheat, simply pop them in the oven for a crisp finish, or sauté them in a skillet with a little oil.
