Ingredients
  

Pasta and Chicken

  • 8 oz Whole Grain Pasta A healthier alternative to regular pasta with added fiber.

  • 4 cups Spinach Packed with nutrients, spinach adds a vibrant color and an extra layer of flavor.

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil and add your whole grain pasta. Cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving a bit of the pasta water.

Cooking the Chicken

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add diced chicken breast seasoned with salt and pepper. Sauté until golden and cooked through, about 5-7 minutes.

Combining Ingredients

  • Stir in minced garlic and fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts and the garlic becomes fragrant.
  • Add the cooked pasta to the skillet. Pour in a splash of reserved pasta water for moisture. Add grated Parmesan, and toss everything together until the pasta is well coated. Taste and adjust seasoning if needed.

Serving

  • Garnish with extra Parmesan and a sprinkle of cracked black pepper!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For an even richer sauce, stir in a splash of cream or a dollop of Greek yogurt.
