  • 1 lb Boneless, skinless chicken breasts Lean protein
  • 2 Bell peppers (any color) For a sweet crunch and vibrant color
  • 1 medium Zucchini Can be substituted with summer squash
  • 2 Carrots For sweetness and color
  • 2 tbsp Olive oil To sauté the ingredients
  • 2 cloves Garlic Minced, for flavor
  • 1 tbsp Italian seasoning For added depth
  • to taste Salt and pepper To season as desired
  • 1 tbsp Fresh parsley Chopped, for garnish

Instructions
 

Preparation

  • Start by cutting the chicken into bite-sized pieces and chopping all the vegetables.
  • In a large skillet, heat olive oil over medium heat.

Cooking

  • Add the chicken pieces to the skillet, seasoning with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  • Toss in minced garlic, bell peppers, zucchini, and carrots. Sauté for another 5-7 minutes until the vegetables are tender but still have a crunch.
  • Sprinkle in Italian seasoning, stirring to coat everything beautifully. Taste and adjust seasoning if desired.
  • Remove the skillet from heat and sprinkle fresh parsley over the top.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the skillet until heated through.
