  • 32 oz Frozen Hash Browns Feel free to use fresh shredded potatoes if you have them.
  • 1 cup Sour Cream You can use Greek yogurt for a lighter option.
  • 1 can Cream of Chicken Soup (10.5 oz) Substitute with cream of mushroom for a vegetarian option.
  • 2 cups Shredded Cheddar Cheese Use sharp or mild based on your preference.
  • 1 small Onion, diced You can use onion powder if you’re short on fresh onions.
  • 1/2 cup Butter You can use olive oil for a lighter touch.
  • to taste Salt and Pepper Don't be shy with the seasoning!

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the frozen hash browns, diced onion, sour cream, cream of chicken soup, and half of the shredded cheddar cheese. Stir gently.
  • Season with salt and pepper. Taste to ensure it's just right.
  • Grease a 9×13 inch baking dish with butter. Pour the mixture into the dish, spreading it evenly.

Cooking

  • Drizzle melted butter over the top of the casserole.
  • Sprinkle the remaining cheddar cheese generously over the top.
  • Cover the dish with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes until the top is bubbly and golden.
  • Allow the casserole to cool for a few minutes before serving.

Notes

For best texture, avoid thawing the hash browns. For variations, consider adding bacon, jalapeños, or fresh herbs.
