Preparation

  • Heat a non-stick skillet over medium heat and add a touch of oil. Once hot, add your hash browns, spreading them evenly. Cook until golden brown and crispy (about 5-7 minutes).
  • In another pan, cook the eggs to your liking. Scrambled is quick and easy, or go for poached for a stunning presentation.
  • Add a little oil to the same pan used for the eggs, and toss in your spinach. Sauté until wilted, which takes just a couple of minutes.
  • In a large bowl, create a base with the crispy hash browns. Top with sautéed spinach, eggs, halved cherry tomatoes, sliced avocado, and a sprinkle of cheese.
  • Add hot sauce and any additional toppings you adore.

Notes

For a healthier option, swap hash browns for sweet potato hash or cauliflower rice. Customize toppings and make it a fun activity for everyone.
