  • 1 can (14.5 oz) diced tomatoes, drained (or use fire-roasted for smoky flavor)
  • 1 cup beef broth (or low-sodium for salt control)
  • 1 tablespoon tomato paste (adds richness)
  • 1 teaspoon Worcestershire sauce (for umami)
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt and black pepper, to taste
  • 2 cups cooked pasta, rice, or mashed potato base (choose your cozy base)
  • 1.5 cups shredded cheddar cheese (or a mix with mozzarella)
  • 1/2 cup breadcrumbs or crushed crackers, optional topping for crunch
  • Fresh parsley or chives for garnish

Preparation

  • Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • In a large skillet over medium heat, add a tablespoon of oil and sauté the chopped onion until translucent, about 4 minutes.
  • Add the garlic and cook for 30 seconds until fragrant.
  • Add the ground beef, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 6-8 minutes.
  • Drain excess fat if desired for a leaner casserole.
  • Stir in the tomato paste, diced tomatoes, beef broth, Worcestershire sauce, oregano, salt, and pepper. Simmer for 5-7 minutes until the sauce reduces and thickens.
  • Fold in the frozen corn and cooked pasta (or rice or mashed potatoes). Taste and adjust seasoning.
  • Transfer the mixture to your prepared baking dish. Sprinkle the shredded cheddar evenly across the top, then add breadcrumbs if desired.
  • Bake for 15-20 minutes until the cheese is bubbling and golden at the edges.
  • Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley.

Notes

For a make-ahead option, assemble the casserole a day in advance and refrigerate until ready to bake. This recipe is versatile; consider using ground turkey or adding vegetables.
