  • 1 bell pepper, diced Adds crunch and sweetness.
  • 1 teaspoon paprika Enhances the flavor with a smoky undertone.

Preparation

  • In a large skillet, over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula (about 5 minutes).
  • Toss in the chopped onion and minced garlic. Sauté for another 2-3 minutes until the onion is translucent and the garlic is fragrant.
  • Add the diced bell pepper and cook for another 2 minutes, letting it soften slightly.
  • Stir in the uncooked rice, diced tomatoes (with their juice), beef broth, paprika, salt, and pepper. Bring everything to a gentle boil.
  • Reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes or until the rice is cooked and has absorbed most of the liquid. Occasionally, check to stir and prevent sticking.
  • Once done, fluff the rice with a fork and sprinkle with fresh parsley before serving.

Notes

You can swap ground beef for ground turkey or chicken for a leaner option. Adds spinach or peas for nutrition. Adjust seasonings before serving.
