Preparation

  • Chop the onion, bell peppers, and mince the garlic.
  • In a large skillet over medium heat, brown the ground beef until it’s no longer pink. Drain excess fat.
  • Add the chopped onions, peppers, and garlic. Sauté until the veggies are soft, about 5 minutes.
  • Add the diced tomatoes (with juice) and stir to combine.

Assembly

  • In a large bowl, mix the cooked beef mixture, uncooked rice, and chicken broth. Season with salt, pepper, paprika, and your choice of herbs.
  • Pour everything into a greased casserole dish and cover with foil.

Cooking

  • Place in a preheated oven at 350°F (175°C) for about 30 minutes.
  • Remove the foil, sprinkle cheese on top, and bake uncovered for another 15 minutes until bubbly and golden.

Notes

Leftover casserole can be stored in an airtight container in the refrigerator for up to 3 days. It also freezes well!
