  • ½ onion chopped Sweet or yellow onions work beautifully.
  • 2 cups mixed vegetables Frozen or fresh; bell peppers, carrots, and peas are great options.
  • ¼ cup soy sauce Key component for rich umami flavor; tamari is a gluten-free alternative.
  • 1 tablespoon sugar Balances out the savory notes; honey can make a lovely substitute.
  • 1 teaspoon sesame oil (optional) For a fragrant finish.
  • to taste chopped green onions For garnish and freshness.

Preparation

  • Start by chopping the onion and mincing the garlic. Having everything ready makes cooking breezy.

Cooking

  • In a large skillet over medium heat, add olive oil. Allow it to shimmer gently before adding the onion.
  • Add the chopped onion and sauté for about 3-4 minutes until they become translucent. Toss in the minced garlic and stir for an additional minute until fragrant.
  • Increase the heat slightly and add the ground beef to the pan. Break it up using a spoon and cook until browned, about 5-6 minutes.
  • Stir in the mixed vegetables, allowing them to cook for a few minutes until heated through and tender.
  • While the beef and vegetables are cooking, boil water in a separate pot. Add the ramen noodles and cook according to package instructions, usually around 3 minutes. Drain and set aside.
  • In the skillet, reduce the heat and pour in the soy sauce, sugar, and sesame oil. Stir well to combine with the beef and vegetables, letting the mixture simmer for 2 minutes.
  • Add the cooked noodles to the skillet, tossing everything together gently until the noodles are fully coated in the sauce.
  • Remove from heat, garnish with chopped green onions, and enjoy.

Notes

Store leftovers in an airtight container in the fridge for up to three days. For longer storage, freeze in a freezer-safe container. Thaw overnight in the fridge and reheat with a splash of water or broth to keep noodles from drying out.
