Ingredients
  

For the Marinade

  • 1 lb Steak (flank or skirt) For robust flavors and tenderness.
  • 2 tbsp Olive Oil Adds richness and helps with grilling.
  • 2 tbsp Fajita Seasoning Use store-bought or homemade blend.
  • 1 Fresh Lime Juice for brightness and tenderizing.

For the Fajitas

  • 2-3 Bell Peppers (mixed colors) For color and sweet crunch.
  • 1 large Onion Caramelizes beautifully when grilled.
  • 4-6 Tortillas Flour or corn wraps.
  • to taste Sour Cream or Greek Yogurt For serving.

Preparation

  • In a bowl, combine olive oil, fajita seasoning, lime juice, and a pinch of salt. Add the steak and let it marinate for at least 15 minutes.
  • Slice bell peppers and onion into thin strips while the grill heats.

Cooking

  • Preheat the grill to high heat or heat a cast iron skillet until hot.
  • Grill the marinated steak for about 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.
  • In the last few minutes of grilling, add sliced veggies to the grill and cook until softened.

Assembly

  • Let the steak rest for a few moments before slicing against the grain into thin strips.
  • Warm the tortillas on the grill, fill with steak and grilled veggies, and top with sour cream or cilantro.

Notes

For a smoky flavor, add chipotle powder to marinade. Experiment with different meats or add fresh herbs after grilling.
