Preparation

  • Rinse the chicken breasts under cold water and pat them dry with paper towels.
  • In a small bowl, combine olive oil, cumin, salt, and pepper. Brush this mixture onto both sides of the chicken.

Cooking

  • Preheat your grill to medium-high heat.
  • Place the chicken on the grill. Grill for about 5-7 minutes on each side, or until the internal temperature reaches 165°F.
  • Generously spoon salsa verde over each breast.
  • Sprinkle the shredded pepper jack cheese on top and close the grill lid. Let it melt for 2-3 minutes.
  • Remove the chicken from the grill, top with freshly chopped cilantro, slice, and serve.

Notes

For a lighter version, consider using Greek yogurt instead of sour cream. Serve with corn on the cob in summer or roasted vegetables in fall. For an extra kick, add sliced jalapeños or green chiles to the chicken.
