Preparation

  • Preheat your grill to medium-high heat.
  • Place the corn on the grill, turning occasionally, until charred and tender—about 10 minutes.
  • Once grilled, let the corn cool slightly, then carefully cut the kernels off the cob using a sharp knife.
  • In a large bowl, combine the grilled corn kernels, diced avocado, chopped red onion, and chopped red bell pepper.
  • In a small bowl, whisk together olive oil, lime juice, salt, and pepper. Pour this dressing over the salad ingredients.
  • Gently toss everything together until well combined. Garnish with fresh cilantro if using, and enjoy immediately!
