Ingredients
  

For the Bagels

  • 1 1/2 cups plain Greek yogurt Full-fat for the richest flavor.
  • 1 1/2 cups self-rising flour Creates the structure and rise.
  • 1–2 tablespoons honey or sugar Optional, for a touch of sweetness.
  • 1 large egg For egg wash; helps toppings adhere.

Toppings

  • sesame seeds Sprinkle generously.
  • poppy seeds Optional for extra flavor.
  • everything seasoning Use for a flavorful twist.
  • coarse salt For added seasoning.
  • cinnamon sugar For a sweet version.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine Greek yogurt and honey. Add self-rising flour a little at a time and stir until a shaggy dough forms. It will be slightly sticky but moldable.
  • Turn the dough onto a floured surface and knead gently for 1–2 minutes until smooth. If too sticky, add a tablespoon more flour at a time.
  • Divide the dough into 6 equal pieces. Roll each piece into a ball, then shape into a bagel by poking a hole through the center with your thumb and gently stretching to form a ring.

Baking

  • Place bagels on the prepared sheet. Beat the egg and brush the tops lightly to help toppings stick and to create that golden sheen.
  • Sprinkle your chosen toppings generously. The sesame seeds will toast and smell amazing as they bake.
  • Bake for 20–25 minutes, until golden and firm. Cool on a rack for 10 minutes.
  • Slice and enjoy warm with cream cheese, jam, or a smear of olive oil and herb-packed tzatziki.

Notes

These bagels are a blank canvas for flavor experiments. You can personalize them with various toppings or mix-ins. Store cooled bagels in an airtight container for up to 3 days or freeze for longer storage.
