Method
 

Preparation
  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Cut the chicken into bite-sized pieces, add them to the marinade, and let it soak for at least 15 minutes.
  3. Chop the bell peppers and red onion into similar sizes for even cooking.
Cooking
  1. Thread the marinated chicken and veggies onto skewers, alternating them for a vibrant presentation.
  2. Preheat your grill to medium-high.
  3. Grill the skewers for about 10 minutes, turning every few minutes until the chicken is cooked through and has beautiful char marks.
  4. While the kabobs are cooking, mix together the Greek yogurt, grated cucumber, dill, garlic powder, and salt in a bowl. Adjust seasonings to taste.
  5. Serve the kabobs alongside your homemade tzatziki.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Give kabobs space on the grill for even cooking. Quality ingredients are key.
