  • 4 cloves Garlic Minced, enhances the entire dish.
  • 2 large Lemon Juice The star of the show that gives the dish its signature tang.
  • 4 cups Chicken Broth Adds depth and warmth to the orzo.
  • 1 tablespoon Fresh Rosemary Chopped, brings a hint of the Mediterranean.

Instructions
 

Preparation

  • Season the chicken thighs generously with salt and pepper.
  • In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Cooking

  • Once the oil is hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes until golden brown. Flip and sear the other side for another 5 minutes.
  • Remove the chicken from the pot and set it aside.
  • In the same pot, add the minced garlic and chopped rosemary. Sauté for about a minute until fragrant, being careful not to burn the garlic.
  • Stir in the orzo for 1-2 minutes, allowing it to soak in the flavors.
  • Pour in the chicken broth and lemon juice, then place the chicken back into the pot, ensuring it’s partially submerged in the liquid.
  • Bring to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 25 minutes, or until the orzo is al dente and the chicken is fully cooked.
  • If using, sprinkle Parmesan on top, giving it a gentle stir to create a creamy texture.
  • Ladle into bowls, garnishing with fresh lemon slices or additional herbs if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For an extra zing, add lemon zest along with the lemon juice. This dish can also be frozen in an airtight container for up to three months.
