For the Skewers

  • 1 pound Boneless Chicken Thighs Or breasts, for a leaner option.

Preparation

  • In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to prepare the marinade.
  • Cut chicken into 1-inch cubes and add them to the marinade. Mix well to ensure each piece is coated. Seal the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 4 hours.

Skewering and Grilling

  • Thread the marinated chicken onto skewers, alternating with bell peppers and red onion.
  • Preheat your grill or grill pan over medium-high heat.
  • Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is fully cooked and has grill marks.
  • Let skewers rest for a few minutes before serving warm.

Notes

Marinate longer for more flavor. Use metal skewers for easy serving. Check for doneness with a meat thermometer (165°F).
