  • 3 tablespoons unsalted butter You can also use coconut oil for a dairy-free option.
  • 4 cups mini marshmallows Substitute with vegan marshmallows if preferred.
  • 6 cups rice cereal Any brand will do; look for gluten-free options if needed.
  • 1/2 teaspoon vanilla extract For a hint of sweetness.
  • 1 pinch salt Enhances the overall flavor.

Preparation

  • In a large saucepan over medium heat, melt the butter, stirring until it’s fully liquid and bubbly.
  • Once the butter is melted, add the mini marshmallows and a pinch of salt. Stir constantly until the marshmallows are completely melted and the mixture is smooth.
  • Remove the saucepan from heat and stir in the vanilla extract.
  • Quickly add the rice cereal to the marshmallow mixture, folding it in gently until fully coated.
  • Pour the mixture into a greased 9x13 inch baking dish. Use a spatula or your hands (dampened for less stickiness) to press it down evenly.
  • Allow your treats to cool at room temperature for about 30 minutes, then cut them into squares.

Notes

Store in an airtight container at room temperature for up to a week. You can freeze them for up to three months; allow to thaw at room temperature before enjoying.
