Preparation

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, combine the softened butter, minced garlic, thyme, and parsley. Mix until well combined.
  • Take each chicken breast and carefully slice a pocket into the thickest part, ensuring not to cut all the way through.
  • Generously stuff each pocket with the garlic butter mixture.
  • Secure the openings with toothpicks or tie them with kitchen twine.
  • Season the outside of the chicken breasts with salt and pepper.

Cooking

  • In a large oven-safe skillet, melt a bit of additional butter (or olive oil) over medium-high heat and sear the stuffed chicken breasts for about 4-5 minutes on each side until golden brown.
  • Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove from oven and let the chicken rest for a few minutes before serving.

Notes

For variations, consider adding shredded cheese to the garlic butter or mixing in spinach or sun-dried tomatoes for added flavor.
