Preparation

  • Pat the chicken breasts dry with paper towels. Season both sides liberally with salt and pepper.
  • In a large skillet over medium heat, melt the butter. Let it sizzle without browning.
  • Add the minced garlic to the pan and stir for about 1 minute until fragrant but not browned.

Cooking

  • Add the chicken to the skillet. Cook for 6-7 minutes on each side until golden brown and cooked through (internal temperature of 165°F). Baste the chicken with the garlic butter as it cooks.
  • Pour in the chicken broth and lemon juice. Let it simmer for 2-3 minutes until the sauce thickens slightly.
  • Sprinkle freshly chopped parsley and lemon zest over the chicken.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat with a splash of chicken broth.
