Preparation

  • Preheat your oven to 400°F (200°C).
  • On a baking sheet, place the salmon fillets and sprinkle them generously with salt and pepper.
  • In a bowl, toss together cherry tomatoes, garlic, and a splash of olive oil. Add this mixture to the salmon, followed by crumbled feta.

Cooking

  • Bake everything in the oven for about 15 minutes until the salmon flakes easily and the tomatoes burst.
  • While that's baking, cook the pasta until al dente according to package instructions.
  • Once the salmon is out of the oven, mix in the fresh spinach until it wilts, then combine with the drained pasta.
  • Add a drizzle of lemon juice, mix gently, and let it all mingle before serving.

Notes

For variations, consider adding olives, artichoke hearts, or seasonal veggies. Use whole grain or veggie noodles for a lighter option.
