Preparation

  • Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, leaving a bit of overhang to lift the brownies out easily.
  • In a medium saucepan over low heat, melt the butter, then remove from heat and stir in the cocoa powder until smooth. Let it cool slightly.
  • Whisk in the sugar, then add the eggs one at a time, mixing thoroughly until glossy. Stir in the vanilla.
  • Fold in the flour and salt just until no streaks remain; overmixing will rob the brownies of their tender fudginess. Fold in the chocolate chips.

Baking

  • Pour the batter into the prepared pan, smoothing the top with a spatula. Bake for 25–30 minutes; a toothpick should come out with a few moist crumbs but not raw batter.
  • Cool completely in the pan, then lift out using the parchment overhang.
  • Once cooled, cut into football-sized rectangles and if you like, round the ends slightly and pipe laces with a simple powdered sugar glaze.

Notes

Store cooled brownies in an airtight container at room temperature for up to 3 days. For longer storage, freeze individual squares separated by parchment for up to 3 months; thaw in the fridge overnight before serving. Use good-quality cocoa and chocolate; avoid overbaking.
