Ingredients
  

Salad Base

  • 2 cups fresh corn kernels Grilled or boiled if using fresh.
  • 1 cup Fritos Corn Chips Add just before serving.
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream Can substitute with Greek yogurt for a lighter option.

Vegetables

  • 3 large green onions Chopped.
  • 1 large bell pepper Diced.

Cheese

  • 1 cup cheddar cheese Shredded.

Preparation

  • If using fresh corn, grill or boil and then cut the kernels off the cob. If using canned, drain and rinse the corn thoroughly.
  • In a large mixing bowl, combine the mayonnaise and sour cream. Stir until smooth and well combined.
  • Fold in the diced bell peppers and chopped green onions into the creamy mixture.
  • Gently mix in the sweet corn, ensuring it is evenly coated with the creamy dressing.
  • Add the shredded cheddar cheese for depth, stirring gently to ensure it’s evenly distributed.
  • Just before serving, fold in the Fritos Corn Chips to maintain their crunch.
  • Optionally, let the salad chill in the refrigerator for about 30 minutes to meld the flavors.

Notes

Add jalapeños for a spicy kick, or lime juice and cumin for a Mexican-inspired twist. Store leftovers in an airtight container for up to 3 days.
