  • 1.5 pounds Boneless skinless chicken breasts Cubed or shredded.
  • 2 cups Orzo pasta About 8 ounces; cooks to tender, rice-like comfort.
  • 4 cups Chicken broth Low-sodium recommended for controlled seasoning.
  • 1/2 cup Dry white wine Optional; adds brightness.
  • 1 teaspoon Dijon mustard For subtle depth.
  • 1 teaspoon Worcestershire sauce Classic French onion undertone.
  • 1 teaspoon Fresh thyme Leaves, or 1/2 teaspoon dried thyme.
  • 4 ounces Cream cheese For creaminess (substitute Greek yogurt for lighter option).
  • 1.5 cups Gruyere or Swiss cheese Shredded; nutty and melty.
  • Salt and pepper To taste.
  • Fresh parsley Chopped, for finishing.

Preparation

  • Preheat your oven to 375°F (190°C). Lightly oil a 9x13 casserole dish.

Cooking

  • In a large skillet, heat olive oil and butter over medium heat. Add sliced onions with a pinch of salt and cook, stirring occasionally, until deeply golden and sweet—about 20 minutes.
  • Stir in garlic for a minute, then pour in white wine (if using) to deglaze, scraping up browned bits. Simmer until nearly evaporated.
  • Add cubed chicken to the skillet and sear just until lightly golden—about 3–4 minutes.
  • Stir in orzo, chicken broth, Dijon, Worcestershire, and thyme. Bring to a simmer, then transfer mixture into the prepared casserole dish.
  • Dollop cream cheese across the top and stir lightly, then sprinkle half the shredded Gruyere on top. Season with salt and pepper.
  • Cover with foil and bake for 20 minutes, then remove foil, sprinkle remaining cheese, and bake an additional 8–10 minutes until bubbly and golden on top.
  • Let rest for 5 minutes, then scatter chopped parsley and serve warm.

Notes

For a vegetarian option, replace chicken with mushrooms and use vegetable broth. To make it leaner, reduce the cheese and stir in extra vegetables like spinach. It can also be made gluten-free by using gluten-free orzo or rice-shaped pasta.
