  • 1 pound large fresh strawberries, washed and thoroughly dried The drier the berries, the shinier the chocolate.
  • 8 ounces dark or semisweet chocolate chips or chopped chocolate Use high-quality chocolate for the best glossy finish.
  • 2 ounces white chocolate or white candy melts For drawing the 'laces.'
  • 1 teaspoon coconut oil or neutral oil Optional, for extra sheen and smoother dipping.
  • 1 sheet parchment paper or silicone mat To set the strawberries without sticking.

Preparation

  • Line a baking sheet with parchment paper and arrange your clean, completely dry strawberries with stems pointing up.
  • Melt the dark or semisweet chocolate: use a double boiler or microwave in 20-second bursts, stirring until smooth. Stir in 1 teaspoon of oil for shine.
  • Hold each strawberry by the stem and dip it into the melted chocolate, swirling to coat two-thirds of the berry. Allow excess chocolate to drip back into the bowl.
  • Place the dipped strawberries on the parchment, spacing them so they do not touch.
  • Melt the white chocolate in the same gentle way until pipeable. Transfer to a small piping bag or a zip-top bag with a tiny corner snipped.
  • Pipe a thin horizontal strip across the chocolate-dipped area near the top to mimic the football seam, then add three or four short vertical stitches to form laces.
  • Chill the tray in the refrigerator for 15–30 minutes until the chocolate sets and becomes firm to the touch.
  • Bring to room temperature for 5 minutes before serving.

Notes

Store in a single layer in an airtight container in the refrigerator for up to 48 hours. Do not freeze, as strawberries become mushy when thawed.
