  • 1 cup sour cream Swap Greek yogurt for a tangy, healthy option.

Casserole Ingredients

  • 2 cups shredded Swiss or Gruyere cheese Mix in cheddar for a sharper bite.
  • 2 cups egg noodles, cooked al dente Or use cooked rice or cauliflower rice for lower carbs.
  • Salt and pepper to taste
  • Chopped parsley for garnish

Preparation

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  • In a large skillet over medium heat, melt the butter. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until golden brown and sweet, about 20 minutes.
  • Meanwhile, cook the egg noodles according to package instructions until al dente. Drain and set aside.

Cooking

  • In another skillet, brown the ground beef over medium-high heat until no longer pink. Drain excess fat. Add minced garlic, thyme, Worcestershire sauce, salt, and pepper. Let it cook together for 2 minutes.
  • Stir the condensed French onion soup (or beef broth and onion powder mixture) into the beef, then remove from heat. Taste and adjust seasoning.

Assembly and Baking

  • In a large mixing bowl, combine the cooked noodles, caramelized onions (reserve a small handful for topping if you like), beef mixture, and sour cream. Mix gently until everything is evenly coated.
  • Transfer the mixture to the prepared baking dish. Sprinkle the shredded cheese evenly on top.
  • Bake for 15–20 minutes, until the cheese is bubbly and lightly browned. Broil for the last 1–2 minutes for a crisp, golden top.
  • Let the casserole rest for 5 minutes before serving. Garnish with chopped parsley and reserved caramelized onions.

Notes

For healthier options, swap half the ground beef for mushrooms, and for gluten-free versions, use gluten-free pasta or rice.
