  • ½ cup avocado, sliced or mashed If not available, vegan cream cheese is a great alternative.

  • Lay out your tortillas on a clean, flat surface.
  • Spread a generous layer of hummus across each tortilla, leaving a small border around the edges.
  • Sprinkle a handful of spinach or mixed greens onto the hummus.
  • Scatter the shredded carrots, sliced bell peppers, and avocado across the greens.
  • Lightly sprinkle salt and pepper over the top.
  • Starting from one edge, carefully roll the tortilla tightly into a log shape.
  • Using a sharp knife, cut the rolled tortilla into 1-inch pieces.
  • Arrange the pinwheels on a platter and enjoy.

Notes

These pinwheels are perfect for gatherings and can be stored in an airtight container for up to 3 days. They can be served cold or warmed slightly.
