  • 1 box Spanish Rice A Roni Time-saving mix; brown rice can be used for a healthier option.
  • 1 medium Onion Yellow or red works well.
  • 2 cloves Garlic Fresh garlic is best for flavor.
  • 1 cup Bell Peppers Any variety can be used.
  • 1 can Diced Tomatoes Canned or fresh, for juiciness.

Seasonings

  • 1 tsp Paprika Adjust to taste.
  • 1 tsp Cumin Adjust to taste.

Preparation

  • In a large skillet, heat a tablespoon of oil over medium heat. Add chopped onion and minced garlic, sautéing until fragrant and translucent.
  • Push the onions and garlic to the side of the pan and add the ground beef. Cook, breaking it apart with a wooden spoon until browned and cooked through.
  • Add Spanish Rice A Roni to the pan, stirring well to combine everything.
  • Pour in the required water as per the rice package instructions. Stir in diced tomatoes and your chosen spices.
  • Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 20 minutes, or until the rice is cooked and tender.
  • Fluff the rice with a fork and stir in bell peppers. Let them wilt slightly from the heat.

Notes

This dish is versatile; consider adding corn or black beans for extra nutrition, or mix in some shredded cheese before serving for a gooey texture. Store leftovers in an airtight container for up to 3 days.
