Preparation

  • Preheat your oven to 400°F (200°C).
  • Pat the turkey thighs dry with paper towels and season with salt and pepper on both sides.
  • In a bowl, combine olive oil, minced garlic, paprika, thyme, and lemon juice.
  • Rub the mixture evenly over the turkey thighs.
  • Place the thighs skin-side up in a baking dish and pour any leftover marinade over the top.

Cooking

  • Roast in the oven for about 35–40 minutes, until the skin is golden and crispy, and the internal temperature reaches 165°F (74°C).
  • Once done, remove the turkey from the oven and let it rest for about 5 minutes.

Notes

For a healthier option, consider using skinless turkey thighs or trimming excess fat. You can also marinate the thighs overnight for deeper flavor.
