  • 8 slices Bread Stale bread works wonderfully—think bagels, croissants, or sourdough.
  • 2 cups Shredded Cheese Cheddar is classic, but Gruyère or Monterey Jack are also great options.
  • 1 pound Bacon or Sausage Vegetarian sausage can be substituted for a meat-free version.
  • 2 cups Spinach Fresh or frozen.
  • 1 cup Bell Peppers, diced Mix and match colors for visual appeal.
  • 1 Onion, diced Shallots or green onions can be used for a milder flavor.
  • Salt and Pepper To taste. Fresh herbs like parsley or chives can elevate the flavors.

Preparation

  • Cut your bread into cubes and place it in a large mixing bowl. Toast slightly for added texture if desired.
  • In a skillet, cook the bacon or sausage until crispy. Drain excess fat and let it cool slightly.
  • In the same pan, sauté the diced onion and bell peppers until soft and fragrant. Add the spinach just until wilted.
  • In another bowl, whisk together the eggs and milk until well combined, adding a pinch of salt and pepper.

Assembly

  • Fold the meat and vegetable mixture into the bread cubes, then pour the egg mixture over everything, stirring gently to combine.
  • Sprinkle half of the cheese into the mixture, reserving the other half for topping.
  • Pour everything into a greased 9×13-inch baking dish. Cover with plastic wrap and let chill in the refrigerator overnight.

Baking

  • Preheat your oven to 350°F (175°C). Uncover the casserole and top with the remaining cheese.
  • Bake for 45-50 minutes until the top is golden brown and the center is set.
  • Let it sit for 5-10 minutes before slicing into squares.
  • Serve warm with a side of fresh fruit or a zesty breakfast cocktail.

Notes

Allowing the casserole to chill overnight helps the flavors meld beautifully. Test for doneness with a knife—it should come out clean when fully baked.
