  • 1 lb ground beef (or turkey for a lighter option)
  • 3 medium-sized potatoes, diced (feel free to use sweet potatoes for a twist)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream (or substitute with almond milk for a dairy-free version)
  • 1 cup chicken broth (low-sodium preferred)
  • 1 cup frozen mixed vegetables (like peas and carrots)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • Fresh parsley for garnish (optional)

  • Heat a large skillet over medium heat. Add the ground meat, breaking it apart with a spatula, and cook until browned.
  • Once the meat is cooked, add in the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3 minutes.
  • Stir in the diced potatoes, chicken broth, salt, pepper, and paprika. Bring the mixture to a low boil.
  • Reduce the heat to low, cover the skillet, and let it simmer for about 10 minutes or until the potatoes are just tender.
  • Add in the frozen mixed vegetables and pour in the heavy cream. Stir until well combined and let it simmer for another 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

Feel free to make this dish your own by adding spices or swapping ingredients. For an extra creamy texture, you can add cheese before serving.
