  • 1.5 pounds ground beef (85/15) Rich and flavorful; swap half for ground turkey for a leaner option.
  • 1 cup breadcrumbs Panko for extra lightness or whole wheat for more texture; gluten-free crumbs work too.
  • 0.5 cup milk Keeps the meatloaf tender; use unsweetened almond milk to make it dairy-free.
  • 1 large egg Binds the loaf; flax egg works in a pinch.
  • 1 small onion, finely chopped Sweet and aromatic; shallots are a more delicate alternative.
  • 2 cloves garlic, minced Adds warmth and depth.
  • 0.25 cup ketchup plus extra for glaze Classic and tangy; swap for tomato paste mixed with honey for a concentrated flavor.
  • 2 tablespoons Worcestershire sauce Umami booster; soy sauce or tamari can substitute.
  • 1 teaspoon dried thyme or Italian seasoning Herbs that pair well with beef.
  • 0.5 teaspoon salt Adjust to taste.
  • 0.5 teaspoon black pepper Adjust to taste.
  • 0.5 cup grated carrot or finely chopped bell pepper (optional) Adds sneak-in veggies and color.

Preparation

  • Preheat the oven to 350°F (175°C). Grease a loaf pan lightly or line a baking sheet for a rustic shape.
  • In a large bowl, whisk together milk and breadcrumbs and let sit for 2 minutes to absorb the liquid.
  • Add egg, ketchup, Worcestershire sauce, onion, garlic, herbs, salt, and pepper to the soaked crumbs. Stir gently until combined.
  • Fold in ground beef (and turkey if using) along with any optional veggies. Mix just until evenly incorporated.
  • Shape the mixture into a loaf fit for your pan, or press into a baking sheet. Smooth the top.
  • Spread a thin layer of ketchup over the top for glaze. For a sweeter sheen, mix ketchup with brown sugar or honey.

Cooking

  • Bake for 55 to 65 minutes, or until an instant-read thermometer reads 160°F (71°C) in the center.
  • Let the meatloaf rest for 10 minutes before slicing to keep it moist.
  • Serve warm and enjoy the comfort!

Notes

For storage, refrigerate meatloaf in an airtight container for up to 4 days. For reheating, slice and warm in a 350°F oven for 10 to 15 minutes, or microwave individual slices for 1 to 2 minutes.
