  • 1 cup Cheese, cubed Use mozzarella, cheddar, or gouda.
  • 1 cup Salami, sliced Can substitute with pepperoni or turkey salami.
  • 1 cup Pickles, sliced Use dill, sweet, or spicy varieties.

Marinade

  • 2 tablespoons Olive oil Use good quality olive oil.
  • 1 tablespoon Vinegar Apple cider vinegar or balsamic vinegar works well.
  • 1 tablespoon Herbs Fresh rosemary, thyme, or oregano.

Preparation

  • Cut the cheese into bite-sized cubes, slice the salami, and chop the pickles.
  • In a bowl, whisk together olive oil, vinegar, and your choice of herbs.
  • In a larger bowl, toss the cheese, salami, and pickles together. Drizzle the marinade over the mixture and gently stir to coat everything evenly.
  • Allow the mixture to sit for at least 30 minutes to let the flavors meld. Refrigerate for a few hours for more intense flavor, if time allows.
  • Transfer to a serving platter and serve.

Notes

For a vegan option, use marinated tofu instead of cheese and substitute salami with marinated vegetables. Keep leftovers in an airtight container in the fridge for up to 3 days.
