For the quiche

  • 1 piece pre-made pie crust Store-bought for convenience or homemade
  • 2 medium baked potatoes Tender, can use leftovers
  • 6 large eggs For custardy texture
  • 1 cup milk Whole, skim, or almond milk
  • 1 cup shredded cheddar cheese Sharp for deeper flavor, or Monterey Jack for milder taste
  • 1/2 cup cooked chopped bacon Crispy bits, can substitute with turkey bacon
  • 1/4 cup green onions Use chives when in season for a unique twist
  • Salt and pepper To taste

Preparation

  • Preheat your oven to 375°F (190°C).
  • Prepare the pie crust: If using a frozen crust, follow package instructions to partially bake it for about 10 minutes.
  • Slice the baked potatoes into half-inch rounds and layer them at the bottom of the crust.
  • In a mixing bowl, whisk together the eggs and milk, adding a splash of hot sauce if desired.
  • Add the cooked bacon, green onions, cheese, salt, and pepper into the egg mixture, stirring gently until well combined.
  • Pour the mixture over the potato layer in the pie crust.

Cooking

  • Bake in the preheated oven for 30-35 minutes, until edges are firm and the center is slightly jiggly.
  • Let the quiche rest for at least 10 minutes before slicing.

Notes

Add cooked veggies like spinach or bell peppers for a health boost. To make vegetarian, skip the bacon and increase veggies or cheese. Different cheeses like feta or gouda can be used.
