  • 1 cup long-grain rice Basmati or jasmine works beautifully here.
  • 2 cups vegetable or chicken broth Feel free to use water if you’re in a pinch.
  • 1 unit lemon (juiced and zested) Essential for bright, fresh flavors.
  • 2 tablespoons fresh parsley Chopped finely for added flavor; basil or cilantro can be substitutes.
  • 1 tablespoon olive oil Can substitute with butter for a richer taste.
  • Salt and pepper to taste Essential for balancing flavors.

Cooking Instructions

  • Rinse 1 cup of rice under cold water to remove excess starch.
  • In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the rinsed rice and cook for 2-3 minutes, stirring occasionally until it becomes slightly translucent.
  • Pour in 2 cups of vegetable or chicken broth and bring it to a boil.
  • Once boiling, reduce heat to low, cover, and let it simmer for about 15 minutes.
  • After 15 minutes, remove the saucepan from heat. Stir in the juice and zest of 1 lemon along with the fresh parsley. Season with salt and pepper to taste.
  • Allow the rice to sit covered for another 5 minutes, then fluff it with a fork before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. Reheat with a splash of water or broth to keep it moist.
