  • 2 pounds beef chuck, cut into 1-inch cubes Use a lean cut for less fat
  • 4 cups beef broth Homemade if you have it or store-bought
  • 4 medium carrots, sliced Or swap with parsnips for a sweet twist
  • 4 medium potatoes, diced Yukon Gold is perfect
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme Substitute with rosemary for a fragrant twist
  • 1 leaf bay leaf
  • Salt and pepper, to taste
  • 2 tablespoons olive oil Or use butter for a richer flavor
  • 2 tablespoons flour for thickening Optional but recommended

Instructions
 

Preparation

  • In a large pot, heat the olive oil over medium-high heat. Add the beef cubes in batches, searing them until browned on all sides. Remove and set aside.
  • In the same pot, add the chopped onions and cook until translucent. Add the garlic and stir until fragrant, about 1 minute.
  • Return the beef to the pot. Stir in the tomato paste and flour (if using), coating the meat and vegetables well.

Cooking

  • Add the beef broth, scraping the bottom of the pot to release all those flavorful bits. Toss in the carrots, potatoes, thyme, and bay leaf. Season with salt and pepper to taste.
  • Bring the stew to a gentle boil, then reduce to low heat. Cover and let it simmer for about 2 hours.
  • After the cooking time, check for seasoning and adjust as necessary. Remove the bay leaf before serving.

Notes
