Ingredients
  

For the kabobs

  • 1 lb Boneless Chicken Breasts Can substitute with thighs for extra flavor.
  • 2 cups Pineapple Chunks Fresh is best, but canned works too.
  • 1 cup Bell Peppers Use any color you like.
  • 1 medium Red Onion Alternatives include sweet onions or zucchini.

For the marinade

  • 1/4 cup Soy Sauce Coconut aminos can be used as a gluten-free substitute.
  • 2 tbsp Brown Sugar Honey or agave syrup can be used instead.
  • 2 cloves Garlic Fresh or powdered for flavor.
  • 1 tbsp Ginger Fresh ginger adds a zingy kick.

Additional items

  • Wooden or Metal skewers Skewers Soak wooden skewers in water for at least 30 minutes if using.

Preparation

  • In a large bowl, whisk together soy sauce, brown sugar, minced garlic, and ginger. Add bite-sized chicken pieces and let them marinate for at least 15 minutes.
  • While the chicken marinates, chop your vegetables and pineapple into similar-sized pieces for even cooking.

Assembly

  • Thread the marinated chicken, pineapple, bell peppers, and onions onto the skewers, alternating colors and textures.

Cooking

  • Preheat your grill to medium-high. Lightly oil the grates to prevent sticking.
  • Place the skewers on the grill and cook for 10-15 minutes, turning occasionally until the chicken is cooked through.
  • Remove from the grill and let them rest for a couple of minutes before serving.

Notes

Consider adding red pepper flakes or jalapeƱos for a spicy kick. Serve with a refreshing side salad or steamed rice.
