Ingredients

  • 2 medium russet potatoes peeled and shredded
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 2 tsp olive oil divided

Instructions

  • In a large bowl mix together the shredded potatoes, salt, and pepper.
  • Heat 1 tsp of olive oil in large skillet over medium heat. Scoop half of the shredded potatoes onto the pan and spread out into a circle. Cook until golden brown, about 3-4 minutes. Flip and cook the other side for an additional 2-3 minutes. Slide onto a plate and cook the rest of the shredded potatoes following the same steps. Serve immediately.
