  • 4 large eggs Use whole eggs or egg whites for a lighter option.
  • 4 pieces tortillas Flour or corn tortillas work wonderfully!
  • 1 cup shredded cheese Cheddar, pepper jack, or feta are great options.
  • 1 cup bell peppers Choose any color you like.
  • 1 medium onion Yellow or red onion will add great flavor.
  • 1/2 cup salsa Store-bought or homemade.
  • 1 medium avocado Optional, adds creaminess.
  • 1/2 cup sour cream or Greek yogurt Choose Greek yogurt for a healthier alternative.

Preparation

  • In a skillet, heat a splash of olive oil over medium heat. Once hot, toss in the diced onion and bell peppers. Sauté for about 3-4 minutes, until they soften.
  • In a bowl, crack the eggs and beat them gently with a fork. Season with salt and pepper.
  • Pour the beaten eggs into the skillet with the softened veggies. Cook until the eggs are just set, about 3-4 minutes.

Assembly

  • Lay a tortilla on a plate, spoon the egg mixture into the center, sprinkle with cheese, and add salsa and optional avocado.
  • Fold in the sides of the tortilla and roll it up tightly. Repeat with the remaining tortillas.
  • Optional: Place the burritos seam-side down in the skillet for a minute to toast the outside.

Notes

Make a batch of the egg mixture ahead of time for quick breakfasts. Store leftovers wrapped tightly in foil or in sealed containers.
