Preparation

  • In a medium saucepan, combine rolled oats and milk over medium heat. Stir gently to blend.
  • Stir in the maple syrup or honey, followed by a pinch of salt.
  • In a small bowl, whisk the egg and vanilla extract together until frothy.
  • Once the oats are simmering, slowly pour the egg mixture into the saucepan while continuously stirring.
  • Continue to cook for another 2-3 minutes while stirring until the oatmeal thickens.
  • Pour the Custard Oatmeal into a bowl and add your favorite toppings.

Notes

Top with sliced fruits, nuts, or add spices for variation. Can be made vegan using a flaxseed egg or silken tofu. Store leftovers in an airtight container for up to three days.
