  • 1 tablespoon Dill or Parsley Fresh herbs for flavor

Preparation

  • Wash and slice the cucumbers under cool water. If preferred, leave the skin on for added nutrients.
  • Halve the cherry tomatoes and slice the red onion thinly, adjusting the amount of onion based on taste.
  • In a bowl, combine the ranch dressing with chopped dill or parsley.
  • In a large bowl, toss together the cucumbers, cherry tomatoes, and red onion. Drizzle with the herb ranch dressing and mix gently.
  • Finish with a pinch of salt and freshly cracked black pepper.

Notes

For added crunch, consider adding thinly sliced bell peppers or radishes. This salad is best enjoyed fresh, but leftovers can be kept in an airtight container in the refrigerator for 1-2 days. For meal prep, slice vegetables in advance but add dressing just before serving to maintain texture.
