  • 1 can (15 ounces) crushed tomatoes Brightens and balances sweetness.
  • 1 cup ricotta cheese Creamy binder (substitute cottage cheese or dairy-free ricotta).
  • 2 cups shredded mozzarella Melty, golden topping (use dairy-free shreds for vegan).
  • 1/2 cup grated Parmesan Nutty finish (nutritional yeast works for dairy-free).
  • 1 medium onion, finely chopped Softens into sweetness.
  • 3 cloves garlic, minced Fragrant backbone.

Instructions
 

Preparation

  • In a skillet, cook ground beef or sausage with the chopped onion and garlic until no pink remains. Season with salt, pepper, oregano, and basil. Drain excess fat.
  • In a bowl, combine the marinara and crushed tomatoes. Stir in half the Parmesan and taste for seasoning — the sauce should sing a little brighter than you think it needs.

Layering

  • Spoon a thin layer of sauce into the bottom of a 6-quart crockpot.
  • Place a single layer of frozen ravioli (do not thaw), then spread dollops of ricotta over the ravioli, sprinkle a bit of the meat mixture, and spoon more sauce.
  • Repeat to build two to three layers, finishing with sauce.

Cooking

  • Sprinkle shredded mozzarella and remaining Parmesan evenly across the top.
  • Cover and cook on low for 3–4 hours, until the ravioli are tender and the cheese is bubbling and lightly golden.
  • Let the lasagna sit uncovered for 10–15 minutes to set slightly before scooping.

Serving

  • Garnish with fresh basil or parsley and serve.

Notes

For extra caramelized cheese, transfer the crockpot insert to the oven under the broiler for 3–4 minutes (watch carefully).
